Healthier "Fried" Rice

Who doesn't love a quick, easy, cheap, and HEALTHIER version of Chinese food? My guys all love this "fried" rice. I usually plan this meal for a night after making brown rice as a side. I make a lot extra and store the rice in the fridge for this meal. In one pan, scramble some eggs or egg whites, and throw in some pre-cooked ham, chicken or pork to heat through. I used diced turkey ham tonight. Remove the eggs and meat from the heat and set aside. In the same pan (because I hate dishes!) heat a tablespoon of coconut oil. Add the cold brown rice and sliced green onion and stir until heated through. Add the eggs/meat to the rice and mix. Serve and add soy sauce to taste (I use low-sodium). Delish!
